The sites and solubilities of oral metabolic enzymes of polysaccharides were studied by a technique that separates glucose and fructose polymers into alkali-soluble and alkaliinsoluble fractions. The alkali-insoluble glucose polymers are greater in quantity than the alkali-soluble polymers.
