-(1
3) Glucanohydrolase from Trichoderma harzianum
1 Experimental Caries Research Laboratories, Dental Institute, University of Zurich, 8028-Zurich, Switzerland
An
-1,3-glucanohydrolase of fungal origin was isolated and purified. Enzyme activity was found to be composed of two enzymes, which were separable by isoelectric focusing. Properties of these enzymes were studied, especially the breakdown of insoluble glucans produced by oral streptococci. The enzyme was used to demonstrate the presence of these glucans in the matrix of dental plaque.
