Demineralization of Enamel in Cooked Food-Saliva Mixtures

Decalcification of enamel was tested on extracted human teeth in cooked food-saliva mixtures. Titratable acidity was recorded, and serial sections were studied. Findings revealed that the degree of decalcification did not always correlate with acid formation. The presence of organic phosphates may be responsible for the extent of decalcification.
