Enamel Dissolution in Saliva and the Calcium and Phosphorus Content of Some Foodstuffs

Determinations were made of the amount of radioactive bovine enamel dissolved after 3 hours in the supernatant fluids of 6-hour salivary fermentations of four wheat flours, four breakfast cereals, four rice and corn products, three candies, five sugar products, and three beverages. Comparisons made were based on content of soluble calcium and phosphorus and the titratable acidity and pH. Supernatant fluids also were mixed so that the effects of graded contents of calcium and phosphorus could be compared.

High acid production and low enamel decalcification were found in the food supernatant fluids containing large quantities of calcium and phosphorus, but there was not direct proportionality between either of these and the observed enamel dissolution.
