A method is described for the in vitro evaluation of the activity of substances as rehardening agents for enamel surfaces. The method is suitable for testing such materials when included in chewing gum compositions. The slow release of materials such as dicalcium phosphate from gum compositions during chewing suggests the use of gums for maintaining salivary concentrations of therapeutic and prophylactic substances.
