Investigation of the enzymatic hydrolysis of
-naphthylacetate by human parotid saliva indicated a pH optimum of 8.6 for parotid saliva total esterases.
The Michaelis-Menten constant was calculated to be 1.45 x 10-3M. A linear relationship between saliva volume and amount of substrate hydrolyzed was observed. The energy of activation was 5,900 cal. per mole. Maximum activity occurred at 60° C. The temperature coefficient (Q10) for the interval 35° to 45° C. was 1.38
