The Str. odontolyticus has been demonstrated to digest milk under certain in vitro conditions. An extracted tooth placed in milk-CaCO3 and inoculated with Str. odontolyticus evidenced superficial enamel decalcification and a penetration and spreading of a destructive process between enamel and dentin. In alkaline media (potato and CaCo3), the organism lost its mucoid characteristics.
